1. This weekend I am going to do the IronGirl 5K in Seattle. It was supposed to be a race I run with my kiddo, but I doubt she will want to lug a cast 3.1 miles. It was supposed to be a PR race, but I am not trained for that. For now it will be a get outside and have fun race.

2. Speaking of the kiddo, she got her new hard cast yesterday and I was the first to sign it.

3. I used to eat eggs everyday for breakfast. I have now moved on to oatmeal. Anyone have any good recipes for baked oatmeal it sounds so good, but I am hate taking a risk on food. Share a link if you have one.
What do you eat for breakfast?

    I tend to eat oatmeal or peanut butter sandwiches. I would love a good baked oatmeal recipe too.

  2. I make baked oatmeal all the time. It's what I eat before my morning workout. I don't have a link but here is my recipe:

    2 bananas, mashed
    3 cups oats
    1 cup milk
    2 eggs
    1 tbsp baking powder
    1 tsp vanilla
    3 tbsp chocolate chips (or whatever mix ins you'd like)

    mix all ingredients and bake in a muffin tin (fill all the way to the top) at 375 degrees for 20-30 mins. Makes 12. Nutritional info: 1 muffin, 131 calories, 3.96g fat, 20.5g carbs, 4.77g protein.

    Obviously, the nutrition info changes if you omit the choc. chips or change the mix ins.

  3. Just have fun...funny, I use to eat oatmeal (for years) and the last few months I switched to more eggs. ;-)

  4. I like simple buttered toast. Or sometimes I have a strawberry Slim Fast shake because it is yummy and keeps me full longer than toast.
