Quick Eats

First,  I was featured over at let's move it mommas - check it out. :)  Now on to - the Monday workout: I was supposed to go to Spin Class Monday morning, but that didn't work out as my bed said, Jen stay in bed don't get up, you need to sleep. Yes I have a talking bed. Of course when I woke up to get ready for work my freaking back hurt. You know that part that is supposed to be healing so I can run next week. Since I missed my morning Spin Class I thanked my husband for getting me a Spin Bike for Christmas and headed down to the garage for an hour on the bike.  After my bike ride I finally started my push up challenge and completed Week 1 Day 1 with sets of 5, 4, 4, 6, 6. I am trying to do all real style push ups and man those are hard.

Now to the quick eats! I could start this with as a busy mom, as a busy full time working person - or just as a person who likes to sleep a little longer in the morning because I have a talking bed. In reality it comes down to:  do I want to make breakfast before I go to work? Or do I want to dry my hair? Lately my hair has gone in a ponytail so that I have time to make some breakfast. A few weeks ago I found this recipe on the lovely Pinterst, which lead me to this awesome website Health-Bent.com.  The recipe had all the components that I look for - quick and easy, with the easy part being the key factor.  I made this Sunday night while making dinner.
What you need:
Canadian Bacon
Muffin Tin

What you do:
Preheat your oven to 350, take your muffin tin out, put a slice of Canadian bacon in each cup, crack an egg in each cup, put muffin tin carefully in the oven and bake to desired doneness (thats a word right?). 8-14 minutes depending on how you like your egg.

Refigerate the leftovers and reheat when you are ready to eat. I heated them for about 45 seconds this morning.  The only downside is I remembered this morning when I heated two up that I don't like egg yoks fully cooked, so tomorrow I plan to eat 3 and just remove the egg yoks.

  3. Great post on let's move it mamas! I love plain yogurt with a banana and kashi cereal, or oatmeal... but I usually have a bit more time to sit down and eat, since I'm not working right now.

  8. Wow! This is something I have NEVER seen or heard of. Being a vegetarian I won't be trying it, but it sure is creative and I bet it is tasty (for the carnivors)!

  9. That is the coolest idea ever! It would be great for a brunch or if you had a bunch of people over for breakfast!
